Thoughts on Lemon Crinkle Cookies

For most of my life, I’ve had really ambitious ideas, into which I launch my whole being for approximately 2.2 hours until it’s too hard or too  boring or the learner’s manual is too technical for this laywoman’s mind.

Among my great almost-hits:

1.  Buying vintage clothing and selling it on ebay (before it became a sensation!).

2.  Becoming a semi-famous photographer so I could go to a lot of weddings and eat free food.

3.  Making candles and selling them for way more than they’re worth so I could vacation all the time and throw away all my dress pants.

After all that brainstorming, I had 4 pieces of clothing from Goodwill sitting in my closet for two years because I was too lazy to learn how to set up an account on ebay and had zero knowledge about vintage clothing. I also own one camera with a really intimidating lens and a weak understanding of aperture (which I am not sure how to pronounce, and thus avoid discussing in social settings), and a whole lot of candle wick and ball jars.

That is why I like baking; there’s a beginning and an end. There’s a process and then a prize, and the prize can go on for days only if I don’t eat all twelve brownies in one sitting. When presented with sweets, I like to stick to the mantra of Oscar Wilde: everything in moderation, including moderation. Oh, it also applies to carbs, coffee, and salt & vinegar chips.

Earlier this week, I felt suffocated by all the ambitious un-finished projects looming around our house and in my mind. They kept me up at night, whispering over and over, Is the kitchen still painted an obnoxious shade of macaroni yellow? Why are you sleeping, you need to find a round coffee table for under $30. And sell your huge couch on craigslist. And wipe up that egg yolk that’s been hanging out on the counter for three days. And, for crying out loud, buy some new mascara. 

As the voices get louder, I get meaner and crankier and utterly unproductive.  I resort to reading all those trendy Morman mommy blogs for hours, which invariably makes me feel worse because they’re so hip and happy and beautiful, and I am wearing extra large fleece sweatpants from the Gap and a tie-dyed Ben and Jerry’s t-shirt. That’s when I know it’s time to get up and bake, time to begin a project I know I can finish and obtain a delectable prize in the end.  That’s why I made these lemon crinkle cookies.

Lemon Crinkle Cookies

Ingredients:
1/2 cup (8 tablespoons) butter, softened
1 cup granulated sugar
3/4 teaspoon vanilla extract
1 large egg
zest from 1 lemon
juice from 1/2 lemon
1/2 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1 1/2 cups all-purpose flour
1/2 cup powdered sugar

How To:
Preheat oven to 350 degrees. Line baking sheets with silicone mats or parchment paper.

In a large bowl, cream butter and sugar together until light and fluffy. Add vanilla, egg, lemon zest and juice and mix well, scraping down the sides as needed. Add the dry ingredients, excluding powdered sugar, and mix until just combined.

Place powdered sugar on a large plate. Roll tablespoon-size balls of dough in the powdered sugar to fully coat. Place on the prepared baking sheets and bake for 9-13 minutes.  The cookies should not be browned on the edges but will be a bit matte on top. Cool for a few minutes on cooling rack and store in an airtight container.

I love #2 because that’s what I love most about being married to a photographer – you get to go to a lot of weddings and experience joy and hope and beauty and love (and eat REALLY GOOD free food). Seriously. The best. I guess what I should be most thankful for is brides who invite the photographer’s wife to join… such sweet women.

          • This time, with half a cake mix, I used 1/4 C oil, one egg, some chocolate chips, roll 1 balls into icing sugar, bake 2 apart at 350 for 10 min.Nothing could be esaeir!

My elderly neighbors have a row of argsaapus in their garden. It produces far more than they can deal with so they give me some two or three times a week when it is producing. Any time I’m cooking on the grill or going to a cookout I put argsaapus on foil with a few green onions, a quarter sitck of butter or olive oil and black pepper. Fold the foil into a packet and place it on the grill for two min., turn it over for another min.(open the packet if you like a little smoke flavor).This is only a base recipe adding parmesan to one packet, cajun seasoning to another and whatever(crinkle cut fries?) to the next mixes shit up.Oh and don’t cook argsaapus to death./waters garden

They’re the Wes Welker of American-style dine-in rtasaurents (Bennigans, Cheddars, etc). Nothing about them blows you away, and it’s no one’s favourite item on the menu, but every time you order them they never disappoint. On the other hand, let’s extend a warm round of fuck you to our good friend coleslaw. The entire dish is just the skid marks from McDonald’s condiment bin emptied out onto shredded cabbage and carrots. Imagine if a jar of mayonnaise nutted on your post-jogging snack; and that’s coleslaw for you. For regional diversity, just use different condiments. While most fat humps use mayonnaise, mustard and/or ranch as their slop(s) of choice, the sporting folks up in the Carolinas use ketchup and vinegar. I mean, fuck. That is just nassss-ty. One nice thing about having a vegetarian girlfriend is not having to EVER be subjected to shit like this. Seitan, on the other hand, should be considered an international war crime punishable by detesticlizing and quartering. I wouldn’t feed seitan to a starving Rwandan refugee. He’d be better off eating dirt.

This toy is ok it does make the nice crinkly noise as adrvitesed, but as far as being a book and teaching letters and numbers It has One Apple on the first page , two birds on the second, and three cat heads on the third page (the name of each item drawn starts with the first three letters of the alphabet: an apple starts with an a, birds starts with a b, and cats starts with a c) and that’s it there are no actual numbers or letters on the toy. The pictures are sewn in light colors as you see on the front with the apple. As it is hard to tell from picture, the colored appendages you see on the sides are not hooks, rather they are simply little flat tags (two layers sewn together not thick). This is not an educational toy (beyond simple motor skills, color contrasts maybe), but does pass as a regular organic crinkle toy, if you want to pay that much for one. On the plus side, the white cloth is very soft (the tags on the sides are a bit rougher material).
